Portable mini pancakes perfect for breakfast or brunch on-the-go.
Ingredients:
  • 1 serving cooking spray
  • 1.25 cups milk
  • 0.25 cup vinegar
  • 0.25 cup oil
  • 1 egg
  • 1.25 cups all-purpose flour
  • 0.25 cup white sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 0.25 teaspoon salt
Instructions:
  • Preheat oven to 375 degrees F (190 degrees C), then generously coat 2 mini muffin tins with cooking spray.
  • Combine milk and vinegar in a bowl and allow it to curdle for about 5 minutes. Then, stir in oil and egg until well mixed.
  • Mix together flour, sugar, baking powder, baking soda, and salt in a bowl. Stir in milk mixture until smooth, then scoop batter into prepared muffin tins using a tablespoon or small batter scoop.
  • Bake in the preheated oven for about 8 minutes until the batter has risen and is still pale. Use a silicone scraper to remove from muffin cups.
