Portable pancakes from Betty Crocker Bisquick Quick to the Table cookbook are perfect for on-the-go breakfasts or snacks.
Ingredients:
  • 1 2/3 cups Bisquick™ Original Pancake and Baking mix
  • 1/2 cup milk
  • 2 tablespoons maple-flavored syrup
  • 2 eggs
  • 1 cup fresh or frozen (thawed) blueberries
  • 1/4 cup butter, softened
  • 3 tablespoons maple-flavored syrup
  • 1/4 teaspoon ground cinnamon
Instructions:
  • Preheat oven to 375°F and grease 24 mini muffin cups with cooking spray.
  • Combine all Pancake Popper ingredients in a medium bowl, except for the blueberries. Gently fold in half of the blueberries into the batter, then distribute the batter evenly among the muffin cups. Sprinkle the remaining blueberries on top of the batter evenly.
  • Bake for 10-12 minutes or until a toothpick inserted in the center comes out clean, then transfer the muffins from the cups to a cooling rack and let them cool for 5 minutes.
  • In a small bowl, mix together the ingredients for the Cinnamon Smear. Spread the delicious butter mixture over the Pancake Poppers and serve right away.
