Healthy wholemeal pancake loaded with blueberries, almond milk, walnuts, and chia seeds for a superfood boost.
Ingredients:
  • 62.50 ml black chia seeds
  • 625.00 ml almond milk
  • 111.38 gm Pure Canadian Maple Syrup
  • 2 oranges
  • 375.00 ml wholemeal plain flour
  • 8.00 gm baking powder
  • 57.50 gm Brand Walnuts, chopped
  • 250.00 ml fresh blueberries or frozen blueberries
  • Olive oil spray
  • 250g tub ricotta
Instructions:
  • In a large jug, mix chia seeds, almond milk, and 1 tablespoon of maple syrup. Let it sit for 3-4 minutes until the seeds swell. While waiting, finely grate 1 teaspoon of orange zest from one orange. Cut the segments from both oranges.
  • In a medium bowl, mix together the flour, baking powder, orange rind, and half of the walnuts. Gradually whisk in the milk mixture until the batter is smooth, then gently fold in the blueberries.
  • 1. Heat a non-stick frying pan over medium heat and spray with oil. 2. Cook 1/2 cup measures of mixture in batches for 2 minutes on each side until golden, yielding 8 pancakes. 3. Serve the pancakes on plates and garnish with orange segments, ricotta, remaining syrup, and walnuts.
