Chia seed, oat and blueberry muffins

Delicious and nutritious blueberry muffins, ideal for lunchboxes or snacking.
Ingredients:
  • 45g rolled oats
  • 35g chia seeds
  • 150g plain flour
  • 150g quinoa flour
  • 12.00 gm baking powder
  • 110g caster sugar
  • 60ml olive oil
  • 460g yoghurt
  • 150g blueberry
Instructions:
  • - Preheat the oven to 180C. - Line 8 holes of a large Texas muffin tin with paper cases. - In a large bowl, combine chia seeds, oats, wholemeal flour, quinoa flour, baking powder, and sugar. Make a well in the center. - Whisk together the oil, eggs, and yogurt.
  • Combine the egg mixture with the dry ingredients and gently stir until just mixed. Gently fold in the blueberries. Spoon the batter into the paper cases evenly. Bake until golden and firm to the touch, about 30-35 minutes. Allow to cool in the tin for 5 minutes before removing.
  • Prepare a dozen standard size muffins and bake in the oven for 20-25 minutes.
