Enhance your oats by adding blueberries for bursts of fruity flavor.
Ingredients:
  • 90g rolled oats
  • 20.00 ml chia seeds
  • 1 medium ripe banana, mashed
  • 375ml oat milk
  • 41.60 gm peanut butter
  • 125g raspberries
  • 12.80 gm coconut sugar
  • Raspberries, extra, to serve
  • Peanut butter, extra, to serve
  • Flaked almonds, to serve
  • Chopped pistachios, to serve
  • Pepitas (pumpkin seeds), toasted, to serve
  • Chia seeds, extra, to serve
  • Sesame seeds, to serve
Instructions:
  • In a medium bowl, mix together the oats, chia seeds, banana, oat milk, and peanut butter. Cover with plastic wrap and refrigerate overnight to allow the flavors to meld and the ingredients to soak.
  • In a saucepan over low heat, gently heat raspberries and sugar until sugar dissolves and raspberries soften, stirring occasionally, about 5 mins. Transfer the mixture to a blender and blend until smooth. Allow it to cool completely before using.
  • Arrange the raspberry puree and oat mixture in serving jars or bowls. Garnish with additional raspberries, peanut butter, almonds, pistachios, pepitas, chia seeds, and sesame seeds.
