Indulge in a deliciously crisp waffle topped with creamy peanut butter and fresh berries for a sweet and satisfying treat. Waffles are back in style for a reason!
Ingredients:
  • 199.50 gm self-raising flour
  • 2 eggs
  • 342.48 gm milk
  • 80g butter, melted
  • 4.40 gm vanilla extract
  • 260.00 gm peanut butter chips (see note)
  • 6 scoops vanilla ice-cream, to serve
  • 40.00 ml granulated nuts, to serve
  • Icing sugar, for dusting
  • 1kg bag frozen raspberries
  • 107.50 gm caster sugar
  • 500g strawberries, hulled, halved
Instructions:
  • Preheat your oven to 150C/130C fan-forced and place a wire rack over a large baking tray before placing it in the oven.
  • To make the berry sauce, combine raspberries and caster sugar in a large saucepan over medium-high heat. Crush the raspberries with a wooden spoon until the sugar has dissolved, about 5 minutes. Bring to a boil, then reduce heat to medium-low and simmer for 10 minutes until it thickens. Strain the mixture through a fine sieve into a jug, discard solids. Return the syrup to the pan and simmer over medium heat until slightly thickened, about 5 minutes. Add strawberries and cook for an additional 2 to 3 minutes until softened. Remove from heat and let cool for 10 minutes before using.
  • Preheat waffle maker as per manufacturer's instructions.
  • In a large bowl, mix flour and caster sugar. Create a well in the center. In a large jug, whisk together eggs, milk, melted butter, and vanilla. Slowly pour the milk mixture into the flour mixture, whisking until almost smooth. Gently fold in the peanut butter chips.
  • Pour batter into the waffle maker until it's halfway full. Close the lid and cook for 1 minute 30 seconds to 2 minutes, or until the waffle is golden and cooked through. Keep them warm in the oven on a wire rack. Repeat with the rest of the batter.
  • Serve waffles topped with ice-cream, berry sauce, nuts, and a dusting of icing sugar.
