Whip up a quick and easy mixed berry chia jam in just 20 minutes - no canning needed. Ideal for summer fruit leftovers.
Ingredients:
  • 1 cup blueberries
  • 3/4 cup chopped strawberries
  • 3/4 cup raspberries
  • 2 tablespoons sugar, plus more to taste
  • 2 tablespoons lemon juice (from about 1/2 lemon), plus more to taste
  • 1 1/2 tablespoons chia seeds
Instructions:
  • In a medium saucepan, mix together the blueberries, strawberries, raspberries, sugar, and lemon juice until well combined.
  • Stir occasionally as you cook: Simmer the fruit over medium heat for 10 to 12 minutes until it breaks down into a syrupy sauce. For a smoother jam, use a wooden spoon or fork to mash any large fruit chunks.
  • After removing the saucepan from heat, sprinkle in the chia seeds and allow the jam to sit for 10 minutes to thicken. Adjust sweetness and acidity with sugar or lemon juice to your liking.
  • Allow the jam to cool to room temperature before transferring it to a jar and placing it in the refrigerator. The jam will thicken further in the fridge. Refrigerate for 3 to 4 weeks.
