Delicious vanilla and almond-infused chia seed muffins are a simple, tasty take on traditional poppy seed muffins.
Ingredients:
  • 3 cups all-purpose flour
  • 2.3333332538605 cups white sugar
  • 1.5 cups almond milk
  • 1 cup vegetable oil
  • 3 eggs, beaten
  • 2 tablespoons chia seeds
  • 2.5 teaspoons almond extract
  • 2 teaspoons vanilla extract
  • 1.5 teaspoons salt
Instructions:
  • Preheat your oven to 300°F (150°C), then lightly grease 2 muffin tins with cooking spray.
  • Combine flour, sugar, almond milk, vegetable oil, eggs, chia seeds, almond extract, vanilla extract, baking powder, and salt in a large bowl. Fill the muffin tins with the batter.
  • Bake in the oven preheated until a toothpick comes out clean and tops are lightly golden, approximately 40 minutes.
