Moist blueberry chia seed muffins with applesauce and orange juice, perfect for a quick breakfast!
Ingredients:
  • 1 cup all-purpose flour
  • 1 cup white sugar
  • 2.5 teaspoons baking powder
  • 1 teaspoon salt
  • 0.5 teaspoon baking soda
  • 1 cup rolled oats
  • 0.5 cup chia seeds
  • 1 cup orange juice
  • 0.5 cup applesauce
  • 0.5 cup cooking oil
  • 2 eggs, beaten
  • 2 cups blueberries
  • 2 tablespoons brown sugar
  • 0.25 teaspoon ground cinnamon
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and prepare a 24-cup muffin tin with either greased cups or paper liners.
  • In a large bowl, combine and whisk together the flour, white sugar, baking powder, salt, and baking soda. Stir in the oats and chia seeds.
  • Combine orange juice, applesauce, oil, and eggs in a bowl, then mix into the flour mixture until just combined. Gently fold in blueberries and spoon batter into muffin cups, filling 3/4 full.
  • Combine the brown sugar and cinnamon in a bowl, then generously sprinkle over the batter.
  • Bake in the oven preheated to perfection until the tops bounce back with a gentle touch, approximately 18 to 20 minutes.
