Bake a delectable blueberry and oat loaf with a touch of sweetness and spice.
Ingredients:
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2/3 cup packed brown sugar
  • 3/4 cup milk
  • 1/2 cup vegetable oil
  • 2 eggs
  • 2 1/4 cups Gold Medal™ all-purpose flour
  • 1 cup quick-cooking or old-fashioned oats
  • 3 teaspoons baking powder
  • 1 cup fresh or Cascadian Farm® organic frozen blueberries (thawed and drained)
Instructions:
  • Preheat the oven to 350°F and grease the bottom of an 8- or 9-inch loaf pan.
  • In a large bowl, combine brown sugar, milk, oil, and eggs using a spoon. Add the remaining ingredients (except for the blueberries) and mix for 30 seconds. Gently fold in the blueberries before pouring the mixture into a pan. If preferred, top with extra oats before baking.
  • Bake for 45 to 55 minutes until a toothpick inserted in the center comes out clean. Allow to cool for 10 minutes, then gently remove the loaf from the pan onto a wire rack. Let it cool completely for about 2 hours before slicing. Store tightly wrapped at room temperature for up to 4 days or refrigerate for up to 10 days.
