Delicious and wholesome blueberry oatmeal pancakes, a gluten-free twist on a classic breakfast favorite.
Ingredients:
  • 2 cups rolled oats
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon baking powder
  • 2 eggs
  • 0.33333334326744 cup honey
  • 0.25 cup almond milk
  • 1 tablespoon coconut oil, or as desired
  • 1 cup blueberries
  • 1 teaspoon coconut oil, or as needed
Instructions:
  • Blend oats until fine; mix with cinnamon, baking powder, and salt in a bowl.
  • In a separate bowl, whisk together eggs, honey, almond milk, 1 tablespoon of coconut oil, and vanilla extract until smooth. Stir in the oat mixture until well combined, then gently fold in the blueberries.
  • Warm up 1 teaspoon of coconut oil on a sizzling griddle over medium-high heat. Spoon generous dollops of batter onto the griddle and cook until bubbles appear and edges are dry, which should take about 3 to 4 minutes. Flip and cook until nicely browned on the other side for another 2 to 3 minutes. Repeat the process with the rest of the batter.
