Maple cranberry sauce with blueberries, orange, ginger, and spices - perfect on oatmeal or pancakes!
Ingredients:
  • 4 cups fresh cranberries
  • 1.5 cups water
  • 1 orange, zested and juiced
  • 4 cinnamon sticks
  • 1 (2 inch) piece fresh ginger, grated
  • 6 whole cloves
  • 0.5 teaspoon freshly grated nutmeg
  • 0.25 teaspoon ground allspice
  • 1 pint blueberries
  • 0.75 cup maple syrup
Instructions:
  • Combine cranberries, water, orange zest and juice, cinnamon sticks, ginger, vanilla extract, cloves, nutmeg, and allspice in a large saucepan. Bring the mixture to a boil, then simmer over low heat, stirring occasionally, until the cranberries burst and the sauce thickens, approximately 20 minutes.
  • Stir in fresh blueberries and rich maple syrup until the mixture gently simmers. Continue cooking, stirring often, until it thickens to your liking, for about 20 minutes. Let it cool down, then take out the cinnamon sticks and cloves, and chill in the refrigerator for at least 6 hours or overnight before serving.
