Whip up a zesty cranberry-blueberry-orange topping to elevate your pancakes and desserts!
Ingredients:
  • 1 1/2 cups cranberry juice cocktail
  • 1/4 cup sugar
  • 2 tablespoons cornstarch
  • 1 1/2 cups fresh or frozen (thawed and drained) blueberries, crushed
  • 3 tablespoons orange juice
Instructions:
  • Combine cranberry juice, sugar, cornstarch, and cinnamon in a 2-quart saucepan until well mixed. Gently fold in the berries.
  • Heat the mixture over medium heat, stirring occasionally, until it thickens and comes to a boil. Boil and stir for 1 minute, then let it cool slightly. Mix in orange juice to reach your preferred consistency, and serve the warm dish.
