Blueberry and cranberry oat muffins - bursting with fresh fruit flavor, perfect for a quick breakfast or snack on the run.
Ingredients:
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 1 cup frozen cranberries, thawed
  • 1.25 cups plain yogurt
  • 0.5 cup white sugar
  • 0.5 cup brown sugar
  • 2 large eggs, beaten
  • 1 cup quick-cooking oats
  • 1 cup frozen blueberries, thawed
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and generously grease a 12-cup muffin pan.
  • Combine flour, baking powder, and baking soda in a small bowl, blending them together until well mixed.
  • Halve the thawed cranberries; set aside.
  • In a large bowl, whisk together yogurt, white sugar, brown sugar, and eggs until light and creamy. Add oats, blueberries, and cranberries, and stir until smooth. Gradually mix in dry ingredients until fully combined.
  • Fill the prepared muffin cups with batter, stopping at 2/3 full.
  • Bake in the preheated oven for about 20 minutes until the top turns light brown. Let it cool for 5 minutes before transferring to a serving plate.
