Delicious blueberry oatmeal muffins: moist, tender, and loaded with juicy blueberries. Simply irresistible!
Ingredients:
  • 1 cup milk
  • 0.25 cup vegetable oil
  • 1 egg
  • 1.25 cups quick cooking oats
  • 0.33333334326744 cup white sugar
  • 1 tablespoon baking powder
  • 1 cup blueberries, rinsed and drained
Instructions:
  • Preheat the oven to 425 degrees F (220 degrees C) and prepare a 12-cup muffin tin by greasing it or lining the cups with paper liners.
  • In a bowl, combine milk, oil, and egg by whisking until blended. In a separate bowl, mix oats, flour, sugar, baking powder, and salt, creating a well in the center. Pour the milk mixture into the well and stir until batter is just combined. Gently fold in blueberries.
  • Fill the prepared muffin cups with batter, leaving them 2/3 full.
  • Bake in the preheated oven for 20 to 25 minutes or until the tops spring back when lightly pressed. Allow to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
