Delicious blueberry muffins packed with oats and Greek yogurt, perfect for a satisfying breakfast on-the-go.
Ingredients:
  • cooking spray
  • 2 cups all-purpose flour
  • 1 cup quick-cooking oats
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1.25 cups Greek yogurt
  • 2 eggs
  • 0.5 cup unsweetened applesauce
  • 0.33333334326744 cup brown sugar
  • 2 tablespoons water
  • 1.5 tablespoons vanilla extract
  • 1.25 cups fresh blueberries
  • 1 teaspoon all-purpose flour
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare a muffin tin by spraying cooking spray or lining with paper liners.
  • In a medium bowl, combine 2 cups of flour with oats, baking soda, baking powder, and salt. Whisk until well mixed.
  • Combine Greek yogurt, eggs, applesauce, brown sugar, water, and vanilla extract, then whisk in a large bowl.
  • Coat blueberries with a touch of flour to keep them evenly distributed in the muffins.
  • Gently combine the flour mixture with the Greek yogurt mixture. Mix in the blueberries. Spoon the batter into the muffin tin, filling each cup 3/4 full.
  • Bake in the preheated oven for about 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
