Rocky road ice-cube tray dessert pies recipe

Whip up quick and delicious mini rocky road pies using puff pastry in an ice-cube tray with marshmallows and Toblerone. Get creative with fillings!
Ingredients:
  • 2 sheets puff pastry, just thawed
  • 42 mini marshmallows
  • 40g chopped glacé cherries
  • 100g Toblerone milk chocolate bar, chopped
Instructions:
  • Preheat your oven to 220C. Lightly grease a baking tray and line it with baking paper.
  • Fold one sheet of puff pastry in half to create two layers. Use a rolling pin to gently flatten the pastry until it can cover a 14-hole ice cube tray easily. Cut the second sheet of pastry in half lengthwise, setting one half aside for a different recipe.
  • Place the rolled pastry over the ice cube tray and gently press it into each hole, being careful not to tear the pastry.
  • Fill each pastry hole generously with mini marshmallows, top with half a teaspoon of cherries, and sprinkle with chocolate pieces. Brush the edges of the pastry with egg wash. Place another pastry piece on top and press gently to seal. Trim off any excess pastry. Freeze for one hour or until the pastry is firm.
  • Remove pastry parcel from the ice cube tray and lay it flat on the prepared tray. Brush with remaining egg and bake for 22-25 minutes until the pastry is puffed and golden. Serve hot.
