Get ready to slurp up these quick and delicious noodle bowls with chopsticks!
Ingredients:
  • 1/2 cup creamy peanut butter
  • 1/2 cup apple juice
  • 2 tablespoons soy sauce
  • 2 chipotle chiles in adobo sauce (from 7-ounce can), seeded and chopped
  • 1 teaspoon adobo sauce from can of chiles
  • 1/4 cup chopped fresh cilantro
  • 4 cups water
  • 2 medium carrots, cut into julienne strips (1 1/2 cups)
  • 1 medium red bell pepper, cut into julienne strips
  • 1 package (8 to 10 ounces) Chinese curly noodles
  • 2 tablespoons chopped peanuts
Instructions:
  • Combine smooth peanut butter, apple juice, savory soy sauce, spicy chiles, and smoky adobo sauce in a medium bowl. Mix until smooth, then gently fold in fresh cilantro.
  • In a 2-quart saucepan, bring water to a boil. Quickly blanch carrots and bell pepper for 1 minute, then remove with a slotted spoon. Cook noodles in the same water according to package instructions before draining.
  • Toss noodles in a creamy peanut butter sauce, then serve in individual bowls. Add crunchy carrots and bell peppers on top. Finish with a sprinkle of roasted peanuts for extra flavor and texture.
