Corn-crusted Mexican mince bake recipe

Smoky chipotle turkey filling with fresh tomato topped with low-fat creamy corn for a lighter winter comfort dish.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 1 large red onion, finely chopped
  • 2 large carrots, peeled, cut into 2cm pieces
  • 500g turkey breast mince
  • 5.00 gm ground cumin
  • 2 chipotles in adobo sauce, finely chopped
  • 44.40 gm no-added-salt tomato paste
  • 3 tomatoes, coarsely chopped
  • 1 large zucchini, cut into 2cm pieces
  • 1 green capsicum, deseeded, cut into 2cm pieces
  • 435g (3 cups) frozen corn kernels, thawed
  • 1 long fresh green chilli, finely chopped, plus extra, to serve
  • 3 eggs
  • 4.00 gm gluten-free baking powder
  • 50g feta cheese, crumbled
  • Fresh coriander leaves, to serve
Instructions:
  • Preheat the oven to 200°C/180°C fan forced and lightly coat a 1.5 litre (6-cup) baking dish with oil.
  • In a large frying pan over medium heat, warm the oil. Add the onion and carrot and sauté for 5 minutes until softened. Increase heat to high. Add the mince and cook for 5 minutes until browned, breaking up any lumps with a wooden spoon. Stir in the garlic, cumin, and chipotle for 1-2 minutes until fragrant. Add the tomato paste and cook for an additional 1 minute, stirring constantly.
  • Pour in the tantalizing tomatoes along with 185ml (3/4 cup) of water and bring it all to a lively boil. Lower the heat gently and let it simmer away, uncovered, for 10 minutes. Toss in the vibrant zucchini and capsicum and let everything simmer for an additional 8 minutes, or until the veggies are tender and the mixture has thickened to perfection. Don't forget to season to taste and enjoy!
  • In a blender, combine corn, chili, eggs, and baking powder until smooth. Add feta and pulse to mix well. Season to taste.
  • Spread the mince mixture into the dish and cover with the corn mixture. Bake until the corn topping is golden and puffed, about 30 minutes. Garnish with extra chili and coriander before serving.
