30-minute crispy cornmeal-coated cod fillets with dilled tartar sauce - a delicious seafood dinner!
Ingredients:
  • 1/2 cup mayonnaise (do not use salad dressing)
  • 1 tablespoon finely chopped onion
  • 2 tablespoons dill pickle relish
  • 1/2 cup Gold Medal™ all-purpose flour
  • 1 teaspoon salt
  • 2 eggs
  • 3 tablespoons water
  • 3 cups corn flakes cereal, crushed (about 1 2/3 cups)
  • 4 cod fillets (4 to 6 oz each)
  • 1/4 cup vegetable oil
Instructions:
  • Combine creamy mayonnaise with diced onion and tangy pickle relish in a small bowl. Refrigerate covered.
  • First, combine flour and salt in one shallow dish. Next, beat eggs and water together in another shallow dish. Finally, place crushed cereal in a third shallow dish. Dredge the fish in flour, dip it in the egg mixture, then coat it in cereal before placing it on an ungreased cookie sheet.
  • Preheat a 12-inch nonstick skillet over medium heat until the oil is hot. Cook the fish fillets in batches, if necessary, ensuring there is at least 1 inch of space between them. Cook the fish for 3 to 4 minutes on each side until well browned and easily flakes with a fork. Serve the fish topped with the sauce.
