Spicy Parmesan-crusted oven-roasted corn: Tender, juicy, and perfect for summer!
Ingredients:
  • 5 ears corn, husks and silk removed
  • 0.5 cup mayonnaise
  • 1 cup shredded Parmesan cheese
  • 1 tablespoon chili powder
  • 1 teaspoon ground black pepper
  • 2 tablespoons chopped fresh parsley
Instructions:
  • Prepare all ingredients.
  • Preheat your oven to 400°F (200°C) to get it nice and hot for cooking.
  • Cut 5 squares of aluminum foil that are 1 ½ times the size of the ears of corn. Wrap each ear of corn in a piece of foil. Combine mayo, Parmesan cheese, chili powder, black pepper, and parsley in a bowl until a thick paste forms.
  • Coat each ear of corn generously with 2 tablespoons of the paste, then tightly wrap them in aluminum foil. Place the corn on a baking sheet.
  • Bake in a preheated oven for a total of 20 minutes, turning halfway through.
