Roasting carrots and onions in the oven creates a delicious caramelized sweetness.
Ingredients:
  • 2 tablespoons olive oil
  • 1 teaspoon white wine vinegar
  • 0.5 teaspoon dried parsley
  • 0.5 teaspoon dried basil
  • 0.5 teaspoon dried oregano
  • 0.25 teaspoon salt
  • 1 pinch ground black pepper to taste
  • 0.5 (16 ounce) package baby carrots
  • 0.5 red onion, cut into wedges
  • 4 cloves garlic, peeled and smashed
Instructions:
  • Preheat your oven to 400 degrees F (200 degrees C, Gas Mark 6) and cover a half sheet pan with parchment paper.
  • Combine oil, vinegar, parsley, basil, oregano, salt, and pepper in a bowl and whisk until well blended. Add carrots and mix until coated. Spread carrots on a sheet pan, then place onions and garlic among the carrots. Finish by drizzling any excess oil over the onions using a spatula.
  • Roast in the oven until veggies are tender and fully cooked, flipping halfway through, for approximately 45 minutes in total.
