Elevate carrots by oven-roasting with pecans and panko for added flavor and crunch.
Ingredients:
  • 0.5 pound carrots, peeled and cut into 3-inch-long pieces
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 0.25 cup chopped pecans
  • 0.25 cup panko bread crumbs
Instructions:
  • Preheat the oven to a toasty 425°F (220°C).
  • Coat carrots generously with olive oil and aromatic Italian seasoning in a bowl, then spread them out evenly on a rimmed baking sheet.
  • Roast in the preheated oven for 15 minutes, then sprinkle pecans and panko on top and continue roasting until golden, about 5 minutes more. Serve immediately.
