Chipotle chicken tacos recipe

Spicy Chipotle seasoned chicken tacos inspired by Mexico - a family favorite for weeknight dinners.
Ingredients:
  • 36.40 gm olive oil
  • 2 corn cobs, husks and silk removed
  • 2 red onions, cut into thin wedges
  • 500g Australian Chicken Breast Fillets, cut into 2cm pieces
  • 435g pkt One Night In Mexico Smokey Chipotle Taco Kit
  • 60g Australian Baby Leaf Blend
  • 1 avocado, stoned, peeled, thinly sliced
Instructions:
  • Brush a chargrill or frying pan with half of the oil and heat over medium-high heat. Cook the corn, turning occasionally, for 10 mins until tender, then transfer to a plate. Next, cook the onion for 5 mins until lightly charred, turning occasionally, before transferring to the plate.
  • Place chicken in a bowl and coat with the taco kit seasoning. Heat oil in a frying pan, then cook chicken over medium-high heat for 7-8 mins until golden and fully cooked. Transfer to a plate.
  • Prepare the tortillas from the taco kit according to the package instructions while the chicken is cooking.
  • Cut the corn kernels off the cob. Arrange tortillas on plates. Top with salad leaves, chicken, onion, corn, avocado, and chipotle sauce. Serve with lime wedges.
