Spicy chipotle-marinated chicken tacos with dark beer.
Ingredients:
  • 3 pounds skinless, boneless chicken breast halves
  • 1 (7 ounce) can chipotle peppers in adobo sauce
  • 1 (12 fluid ounce) can or bottle dark beer, divided
  • 1 tablespoon olive oil
  • 1 (10 ounce) package corn tortillas, or as needed
Instructions:
  • In a resealable plastic bag, combine chicken, chipotle peppers in adobo sauce, and half of the beer. Remove air, seal the bag, and refrigerate for at least 1 hour.
  • In a skillet over medium-high heat, heat olive oil. Add the chicken with the marinade. Cook, stirring occasionally, and pour in the remaining beer. Cook until the chicken is fully cooked, about 20-30 minutes. Use an instant-read thermometer to ensure the chicken reaches 165°F (74°C).
  • "Pull apart the tender chicken in the sizzling skillet with two forks, then present it in warm corn tortillas."
