Quick and flavorful pork salad, ready in 25 minutes for an effortless summer dinner.
Ingredients:
  • 200g fresh cherries, pitted, sliced
  • 1 French shallot, finely chopped
  • 1 long fresh green chilli, deseeded, finely chopped
  • 42.00 gm fresh lime juice
  • 18.20 gm extra virgin olive oil
  • 20.00 ml chipotle sauce
  • 2 x 300g pork fillets, trimmed
  • 1 bunch watercress, leaves picked
  • 2 Lebanese cucumbers, peeled into ribbons
  • 150g sugar snap peas, halved
  • 55g (1/3 cup) chopped roasted hazelnuts
Instructions:
  • In a bowl, mix together cherries, shallots, chili, 1 tsp lime juice, and 2 tsp olive oil. Add seasoning and toss well to combine. Set aside.
  • In a small bowl, mix the chipotle sauce, the rest of the lime juice, and olive oil. Brush half of the chipotle mixture onto the pork and season.
  • Preheat a barbecue grill or chargrill pan on high. Take the pork out of the marinade, saving the marinade. Spray the pork lightly with oil and grill, turning occasionally and brushing with the reserved marinade, for 8 minutes or until cooked to your preference. Place the pork on a plate, cover loosely with foil, and let it rest for 5 minutes before slicing.
  • Distribute the watercress, cucumber, and sugar snap peas among individual serving bowls. Arrange the sliced pork on top. Sprinkle with hazelnuts and generously spoon cherry salsa over to serve.
