Quick and flavorful chipotle chicken tacos with smoky chipotle chile, vegetables, shredded chicken, queso fresco, and cilantro. A delicious meal enjoyed by all, ready in no time!
Ingredients:
  • 1 box (8 oz) frozen garden vegetable medley
  • 1 chipotle chile in adobo sauce (from 7-oz can), chopped (with 1 tablespoon sauce)
  • 1 cup shredded chicken breast
  • 8 tortillas from 1 package (8.2 oz) Old El Paso™ Flour Tortillas for Soft Tacos and Fajitas (10 Count)
  • 1/4 cup crumbled queso fresco cheese
  • 1 tablespoon chopped fresh cilantro
  • Lime wedges, if desired
Instructions:
  • Follow the instructions on the box to cook the vegetable medley, then transfer it to a 2-quart saucepan. Add chipotle chile and adobo sauce, followed by the chicken. Cook over medium heat for 1 to 2 minutes, stirring often until heated through.
  • Fill tortillas generously with the delicious mixture, then fold them in half to encase the flavorful filling. Finish off with a beautiful sprinkle of cheese and fresh cilantro before serving with zesty lime wedges on the side.
