Chipotle chicken pizza with walnuts and blue cheese

Whip up a delicious chicken pizza with walnuts and tangy blue cheese for a speedy meal!
Ingredients:
  • 50.00 ml chipotle sauce (see note) or barbecue sauce
  • 17.70 gm wholegrain mustard
  • 60g sour cream
  • Juice of 1/2 lemon
  • 2 x 180g chicken breast fillets, cut into 1cm thick slices
  • 125ml passata
  • 41.60 gm tomato sauce (ketchup)
  • 2 Lebanese breads
  • 1 green capsicum, thinly sliced
  • 1 long green chilli, thinly sliced
  • 80g mild blue cheese (such as gorgonzola dolce - see note)
  • 50g walnut
Instructions:
  • Preheat your oven to 200°C and prepare 2 baking trays by lining them with baking paper.
  • Combine chipotle sauce, mustard, sour cream, lemon juice, and olive oil in a bowl. Season and mix well. Divide the mixture in half into two bowls. Add the chicken to one bowl and coat it with the marinade.
  • Preheat a large non-stick pan over medium heat. Cook the chicken in 2 batches, turning occasionally, until fully cooked, about 5-6 minutes. Set aside once done.
  • In a bowl, mix tomato passata and tomato sauce together. Spread half of the mixture over one Lebanese bread. Layer with half the chicken, capsicum, chilli, cheese, and nuts. Repeat the process with the remaining bread, sauce, and toppings. Transfer to trays and bake for 8-10 minutes until golden and crispy.
  • Add 2 tablespoons of water to the chipotle mixture to make it more fluid, then generously drizzle it over the pizzas. Serve right away for the best experience.
