Quick and flavorful chipotle baked chicken taquitos with homemade guacamole dipping sauce.
Ingredients:
  • 1 lb ground chicken
  • 1 chipotle chile in adobo sauce (from 7-oz can), seeded, chopped
  • 1 tablespoon adobo sauce (from can of chipotle chiles)
  • 3 green onions, chopped
  • 1 1/2 cups shredded sharp Cheddar cheese (6 oz)
  • 1 package (11 oz) Old El Paso™ Flour Tortillas for Burritos (8 Count), heated as directed on package
  • Cooking spray
  • 1 tablespoon coarse (kosher or sea) salt
  • 1 avocado, halved, pitted
  • Juice of 1 lime
  • 1 to 2 tablespoons chopped fresh cilantro
  • 1 clove garlic, finely chopped
  • Coarse or table salt to taste
Instructions:
  • Preheat oven to 350°F and generously spray a large cookie sheet with cooking spray.
  • Cook the chicken in a large skillet over medium-high heat for approximately 5 minutes, stirring occasionally until it is no longer pink. Once done, take it off the heat and mix in the chipotle chile, adobo sauce, onions, and cheese until well combined.
  • Spoon 1/3 cup of chicken mixture down the center of each warm tortilla. Roll them up and place seam side down on a baking sheet. Spray the tops with cooking spray and sprinkle 1 tablespoon of coarse salt.
  • Bake for 12 to 15 minutes until golden brown and crispy.
  • Scoop out ripe avocado into a bowl and mash it with a fork. Drizzle fresh lime juice over the avocado, then add chopped cilantro and minced garlic, mixing everything together thoroughly. Finally, season with salt to taste.
  • Enjoy the hot taquitos alongside the delicious dipping sauce.
