Delicious and satisfying muffins perfect for busy mornings or leisurely brunch.
Ingredients:
  • 1 cup buttermilk
  • 1 cup old-fashioned oats
  • 1/3 cup vegetable oil
  • 1/2 cup packed brown sugar
  • 1 egg
  • 1/2 cup whole wheat flour
  • 1/2 cup Gold Medal™ all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup fresh or frozen (thawed and drained) blueberries
Instructions:
  • Preheat your oven to 400°F. Line 12 regular-size muffin cups with paper baking cups or grease only the bottoms with shortening or cooking spray.
  • - Combine buttermilk and oats in a small bowl; let it sit. - In a large bowl, mix oil, brown sugar, and egg using a spoon. Add flours, baking soda, cinnamon, and salt; mix until just combined. - Gently fold in the oat mixture and blueberries. - Divide the batter evenly into muffin cups.
  • Bake until golden brown (15 to 20 minutes). Allow to cool for 5 minutes, then remove from pan and serve warm.
