Elevate your oatmeal breakfast with baked blueberry coconut oatmeal in a delicious cinnamon-spiced custard.
Ingredients:
  • 2 cups rolled oats
  • 1 cup unsweetened flaked coconut
  • 0.25 cup light brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 2 cups skim milk
  • 1 large egg, beaten
  • 3 tablespoons coconut oil, softened
  • 1 teaspoon vanilla extract
  • 1.5 cups blueberries
Instructions:
  • Preheat your oven to a cozy 350 degrees F (175 degrees C) and generously grease an 8-inch square baking dish.
  • Combine oats, coconut flakes, brown sugar, baking powder, cinnamon, and salt in one bowl. In another bowl, whisk together milk, egg, coconut oil, and vanilla extract.
  • Place most of the blueberries at the bottom of the dish. Spread the oat mixture on top. Pour the milk mixture over everything. Sprinkle the rest of the blueberries evenly.
  • Bake until the top is golden and the oatmeal is firm, approximately 40 minutes. Allow to cool for 5 minutes before serving.
