Delicious blueberry oatmeal bars with whole oats, oat flour, fresh berries, walnuts, and coconut - perfect for breakfast or snacks on the run.
Ingredients:
  • 1 cup whole oats
  • 1 cup oat flour
  • 0.5 cup brown sugar
  • 0.5 cup almond milk
  • 0.25 cup melted butter
  • 1 cup fresh blueberries
  • 0.5 cup chopped walnuts
  • 0.33333334326744 cup shredded coconut
Instructions:
  • - Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease an 8-inch square pan.
  • In a bowl, mix together whole oats, oat flour, brown sugar, salt, and baking soda. Add almond milk, eggs, butter, and vanilla, stirring until combined. Gently fold in blueberries and walnuts. Spread the mixture into the pan and sprinkle shredded coconut on top.
  • Bake in the preheated oven until edges are golden and coconut is browned, approximately 35 minutes. Allow to cool in the pan for 10 minutes before cutting into 16 squares.
