Wholesome and delicious blueberry-oatmeal scones with pecans, perfect for breakfast using fresh or frozen blueberries.
Ingredients:
  • 1.5 cups rolled oats
  • 0.5 cup whole wheat flour
  • 0.75 teaspoon baking soda
  • 6 tablespoons butter, cubed
  • 0.75 cup milk
  • 1 cup fresh blueberries or frozen blueberries, thawed
  • 0.5 cup pecans
  • 2 tablespoons milk
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and lightly grease a baking sheet.
  • Combine the oatmeal, flours, sugar, baking soda, and baking powder in a mixing bowl. Use a pastry cutter or two forks to blend in the butter until crumbly. Gently mix in the milk until just combined, then fold in the pecans and blueberries. Shape the dough into a large 1-inch high circle. Cut into 8 pieces, place on baking sheet, and brush the tops with 2 tablespoons of milk.
  • Bake until golden brown in a preheated oven for 20-25 minutes.
