Chia seed cornmeal waffles with satisfying crunch, perfect for topping your way.
Ingredients:
  • 2 egg whites
  • 1 cup cornmeal
  • 1 tablespoon chia seeds
  • 2 teaspoons baking powder
  • 2 cups buttermilk
  • 0.25 cup canola oil
  • 2 egg yolks
Instructions:
  • Preheat waffle iron as directed by the manufacturer.
  • Using an electric mixer on high, beat egg whites in a glass or metal bowl until stiff peaks form. Tips: Lift your beater or whisk straight up to check for sharp peaks.
  • In a bowl, combine flour, cornmeal, chia seeds, baking powder, baking soda, sugar, and salt. In another bowl, mix buttermilk, canola oil, and egg yolks, then add to the flour mixture to make a smooth batter. Carefully fold in whipped egg whites until just combined.
  • Pour a generous 1/4 cup of batter onto the hot waffle iron and cook as per the manufacturer's guidelines until beautifully golden, approximately 5 minutes. Continue this process with the remaining batter.
