Deliciously dense lemon ricotta waffles with a zesty twist - a perfect balance of flavor and richness.
Ingredients:
  • 1 cup all-purpose flour
  • 0.5 cup cornmeal
  • 0.25 cup white sugar
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.75 cup half-and-half
  • 0.5 cup ricotta cheese
  • 2 large eggs
  • 2 tablespoons melted butter
  • 1 teaspoon lemon extract
  • cooking spray
Instructions:
  • Preheat your waffle iron as directed by the manufacturer.
  • Combine flour, cornmeal, sugar, baking powder, baking soda, and salt in a large mixing bowl and whisk until fully mixed.
  • Combine half-and-half, ricotta cheese, eggs, melted butter, and lemon extract in a bowl. Whisk until smooth, then pour into the flour mixture and mix until fully combined.
  • Spray the preheated waffle iron with cooking spray and pour batter onto the iron in batches. Cook until crisp, golden brown, and the steaming stops, approximately 5 minutes.
