Ingredients:
  • 1 cup cake flour
  • 2 teaspoons baking powder
  • 0.75 cup white sugar
  • 0.5 cup butter, softened
  • 1 cup ricotta cheese
  • 1 large lemon, zested and juiced
  • 0.25 cup milk
Instructions:
  • Preheat your oven to a cozy 325 degrees F (165 degrees C), then generously grease an 8-inch round springform pan with butter and line it with parchment paper.
  • Combine the flour and baking powder in a small bowl, stirring until well mixed.
  • In a large bowl, use an electric mixer to blend softened butter and sugar until creamy. Mix in vanilla and beat for 1 minute. Add eggs one at a time, ensuring they are well incorporated. Gradually mix in the flour mixture until combined. Stir in ricotta cheese, lemon zest, and lemon juice, then beat for 2 minutes on medium speed. Pour in milk and mix on low speed until just combined. Transfer the batter into the prepared baking pan.
  • Bake in the preheated oven for 45 to 50 minutes, or until a knife inserted in the center comes out clean. Allow the cake to cool completely before serving.
