Blueberry Coconut Chia Smoothie Bowl: Blend overnight oats with blueberries, top with coconut and chia seeds for a vibrant, delicious breakfast.
Ingredients:
  • 1 cup rolled oats
  • 1.25 cups unsweetened vanilla-flavored almond milk, divided
  • 1 frozen banana, chopped
  • 1 cup blueberries
  • 1 teaspoon maple syrup, or to taste
  • 2 tablespoons flaked coconut
  • 1 tablespoon fresh blueberries
  • 1 teaspoon chia seeds
Instructions:
  • In a bowl, mix oats with 2/3 cup almond milk. Cover and refrigerate until oats soak up the milk, at least 8 hours or overnight.
  • In a blender, add oats-almond milk mixture, banana, blueberries, vanilla, and maple syrup with remaining almond milk. Blend until smooth.
  • Divide the smoothie into 2 bowls and generously sprinkle with coconut, blueberries, and chia seeds.
