Summer treat: Banana pancake fruit skewers - quick, easy, and portable!
Ingredients:
  • 2 ripe bananas
  • 4 eggs
  • 50g (1⁄2 cup) rolled oats
  • Melted butter, to grease
  • Strawberries, sliced, to skewer
  • Kiwi fruit, sliced, to skewer
  • Honey, to drizzle
Instructions:
  • Blend together the banana, eggs, and oats in a food processor until creamy.
  • 1. Preheat a non-stick frying pan over medium heat and brush with melted butter. 2. Spoon 2 tsp of batter into the pan to form mini pancakes. Make a total of 6 pancakes. 3. Cook for 1 minute on each side until golden and cooked through. Transfer to a plate. 4. Continue cooking the rest of the batter, greasing the pan with more butter as needed to avoid sticking.
  • Skewer the pancakes with fresh strawberries and kiwi. Drizzle with honey for a sweet finish.
