Delicious mini pancake skewers with fresh fruit; a versatile and fun treat for all ages, ideal for breakfast, snack time, or entertaining.
Ingredients:
  • 1 cup all-purpose flour
  • 2 tablespoons white sugar
  • 0.25 teaspoon baking soda
  • 0.25 teaspoon ground cinnamon
  • 1 large egg
  • 1 tablespoon melted unsalted butter
  • 1 teaspoon amaretto extract
  • 1 pint strawberries, sliced horizontally
  • 1/4 cup blueberry cream cheese spread (such as Philadelphia®)
  • 1 medium banana, sliced
  • 1 tablespoon confectioners' sugar, or to taste
  • 10 bamboo skewers, or as needed
Instructions:
  • Combine flour, sugar, baking powder, baking soda, cinnamon, and salt in a bowl. In another bowl, whisk together milk, egg, butter, and amaretto extract. Gently mix the wet ingredients into the dry ingredients until a smooth batter forms.
  • Preheat a nonstick skillet or griddle over medium heat. Spoon small amounts of batter onto the skillet to make 1-inch pancakes. Cook for 1-2 minutes, flip, and cook for another minute until golden brown. Transfer pancakes to a plate and repeat with the rest of the batter.
  • Assemble the ingredients in the following order on a work surface: pancake, banana, pancake with cream cheese, pancake, strawberry, and pancake. Insert a skewer through the center of each stack and repeat to make more skewers using 4 pancakes each.
  • Sprinkle with confectioners sugar and present.
