Fun and versatile skewers for entertaining or a special birthday breakfast for all ages!
Ingredients:
  • 2 slices thick raisin bread, crusts trimmed
  • 50g butter, finely chopped
  • 6 strawberries, hulled, halved
  • 84.38 gm maple syrup, to serve
  • 75.00 gm self-raising flour
  • 84.98 gm milk
Instructions:
  • For mini pancakes: In a bowl, mix together flour and sugar, then create a well in the center. In a separate jug, whisk together milk and egg, then pour into the flour mixture. Stir thoroughly until well combined.
  • Preheat a large frying pan over medium-high heat and lightly brush it with butter. Spoon level teaspoons of batter into the pan, cook for 2 minutes until bubbles appear, then turn and cook for another 1 to 2 minutes until golden. Transfer to a plate, cover to keep warm, and repeat with the rest of the batter and butter. Enjoy!
  • Cut slices of raisin bread into bite-sized pieces. Heat butter in a large frying pan over medium-high heat. Cook bread, flipping occasionally, for 5 minutes or until golden brown.
  • Skewer 2 pancakes, 1 piece of fruit toast, and 1 strawberry half. Repeat, then add 2 more pancakes to each skewer. Repeat with remaining skewers.
  • Drizzle skewers with maple syrup before serving.
