Impressive mini pancake skewers with fresh berries, maple syrup, and powdered sugar - ideal for a weekend breakfast or brunch!
Ingredients:
  • 2 tablespoons rice vinegar
  • 1 cup milk
  • 1.5 cups all-purpose flour
  • 0.5 cup unsalted butter, melted
  • 2 large eggs
  • 1 tablespoon white sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon vegetable oil, or as needed

  • 0.25 cup fresh raspberries, or as needed
  • 0.25 cup fresh blueberries, or as needed
  • 0.25 cup fresh strawberries, or as needed
  • 1 tablespoon maple syrup
  • 1 tablespoon powdered sugar, or as needed
Instructions:
  • Combine rice vinegar with milk, allowing it to "sour" for approximately 5 minutes.
  • In a large mixing bowl, blend together the milk mixture, flour, butter, eggs, sugar, baking soda, baking powder, and salt until smooth.
  • Preheat a nonstick pan over medium heat with a drizzle of oil. Spoon 1/2 tablespoon of batter for each pancake onto the pan. Cook until golden brown on one side for 1 to 2 minutes, then flip and cook the other side for another 1 to 2 minutes. Plate the pancake and continue with the rest of the batter.
  • Skewer 3 to 5 mini pancakes, then layer with raspberries, blueberries, and strawberries. Drizzle with syrup and sprinkle with powdered sugar for a delightful finish.
