Very Dairy Strawberry Shortcake Dip

Delicious mini strawberry shortcake skewers paired with a light and sweet strawberry cream cheese dip.
Ingredients:
  • 0.5 cup heavy cream
  • 1 (3 ounce) package cream cheese, softened
  • 1 tablespoon confectioners' sugar
  • 2 tablespoons milk
  • 1.5 teaspoons strawberry jam
  • 1.25 cups all-purpose flour
  • 1.75 teaspoons baking powder
  • 2 tablespoons white sugar
  • 0.5 teaspoon salt
  • 0.25 cup shortening
  • 1 egg yolk
  • 0.5 cup buttermilk
  • 12 toothpicks
  • 0.5 pound strawberries, cut into 1/2-inch slices
  • 1 tablespoon strawberry jam
Instructions:
  • Whip heavy cream in a large bowl with an electric mixer until stiff peaks form.
  • Combine cream cheese, confectioners' sugar, milk, and 1 1/2 teaspoon of strawberry jam in a large bowl until smooth and creamy.
  • Gently fold the whipped cream into the cream cheese mixture.
  • Chill in the fridge until you're ready to enjoy.
  • Heat your oven to 350°F (175°C).
  • Combine flour, baking powder, sugar, and salt in a spacious bowl, using a whisk to blend thoroughly.
  • Using a knife or pastry blender, work the shortening into the mixture until it looks like coarse crumbs.
  • In a small bowl, whisk together egg yolk and buttermilk until combined. Gently fold this mixture into the flour mixture until just moistened.
  • Transfer the dough to a lightly floured surface and knead it 5-6 times. Shape the dough into a 1/2 inch thick round by patting or rolling it out.
  • Using a 1-inch biscuit cutter, shape dough and place on a baking sheet.
  • Bake until beautifully golden, for 10 to 15 minutes in the preheated oven.
  • Let the sheet cool for 10 minutes before transferring the baked goods to a wire rack to cool completely.
  • Slice the cooled biscuits in half.
  • Thread a toothpick through a biscuit half, a slice of strawberry, and another biscuit half.
  • Create an elegant swirl with 1 tablespoon of strawberry jam in the chilled dip before serving alongside the strawberry shortcake skewers.
