Banana-infused whole wheat bread with a touch of olive oil and applesauce for a healthier twist.
Ingredients:
  • 0.5 cup lightly packed brown sugar
  • 0.33333334326744 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1.75 cups mashed bananas
  • 1.75 cups whole wheat flour
  • 1 teaspoon baking soda
  • 0.5 cup chopped walnuts
Instructions:
  • Preheat the oven to 325 degrees F (165 degrees C) and line the bottom of a 9x5-inch nonstick loaf pan with parchment paper.
  • In a large bowl, whisk together brown sugar and oil until smooth. Mix in eggs, applesauce, and vanilla extract until well combined. Gently fold in mashed bananas, then add whole wheat flour and baking soda, stirring until just mixed. Lastly, gently fold walnuts into the batter.
  • Transfer the batter into the greased loaf pan.
  • Bake in the preheated oven for about 1 hour until a toothpick inserted in the center comes out clean. Then, let the loaf cool on a wire rack for 30 minutes, covered with a clean towel, before slicing.
