Elevate your brunch with festive orange cakes, topped with mascarpone champagne cream and orange marmalade for a decadent touch.
Ingredients:
  • 2 cups Bisquick™ Complete pancake & waffle mix
  • 2/3 cup fresh orange juice
  • 2/3 cup water
  • 1/2 cup mascarpone cheese
  • Grated peel of 1 medium orange
  • 5 tablespoons powdered sugar
  • 1/2 cup champagne or other bubbly wine
  • 1/3 cup whipping cream
  • 4 to 6 tablespoons orange marmalade
  • Orange peel for garnish
Instructions:
  • Preheat griddle or skillet over medium-high heat to 375°F and lightly brush with vegetable oil.
  • In a medium bowl, whisk pancake ingredients until smooth. Use a tablespoon or small ice cream scoop to pour batter onto a hot griddle, forming mini pancake rounds. Cook until bubbles form and break on the surface, then flip and cook until golden brown. Transfer pancakes to a cooling rack.
  • In a small bowl, combine mascarpone cheese, orange peel, and powdered sugar. Beat with an electric mixer on medium speed until well blended. Gradually pour in champagne while mixing on low speed until smooth. In another bowl, whip cream on high speed until stiff peaks form. Gently fold whipped cream into the mascarpone mixture using a spatula.
  • Create a pancake stack by layering 3 mini pancakes on a plate. Spread each pancake with orange marmalade before adding the next one. Finish by topping the stack with champagne cream and garnishing it with orange peel.
