Make mini pancake muffins for an easy and delicious breakfast treat!
Ingredients:
  • 150g (1 cup) plain flour
  • 4.00 gm baking powder
  • 0.63 gm bicarbonate of soda
  • 160ml (2/3 cup) milk
  • 30g unsalted butter, melted
  • 1/2 punnet fresh blueberries
  • Golden syrup or maple syrup, to drizzle
Instructions:
  • Preheat your oven to 180C/160C fan forced. Coat 24 non-stick mini muffin pans with a spritz of olive oil.
  • In a large bowl, combine the flour, sugar, baking powder, and bicarbonate of soda by whisking. Make a well in the center and add the egg. Gradually pour in the milk while whisking until smooth. Whisk in the butter until smooth. Divide the batter among the prepared pans and top each with 2-3 blueberries. Bake until golden, approximately 12-15 minutes. Allow the muffins to cool slightly in the pans before transferring to a wire rack.
  • Transfer the muffins to a stylish serving platter and generously drizzle with golden syrup or maple syrup.
