Irresistible pumpkin chocolate chip mini muffins made with Original Bisquick mix for a decadent treat.
Ingredients:
  • 1 cup Original Bisquick™ mix
  • 1/4 cup sugar
  • 1 teaspoon pumpkin pie spice
  • 1 egg, beaten
  • 1/4 cup milk
  • 1/4 cup canned pumpkin (not pumpkin pie mix)
  • 1/4 cup semisweet chocolate chips
Instructions:
  • Preheat oven to 350°F and generously coat 16 mini muffin cups with cooking spray.
  • Combine Bisquick mix, sugar, pumpkin pie spice, egg, milk, and pumpkin in a medium bowl until well combined. Gently fold in chocolate chips. Fill muffin cups two-thirds full with the batter.
  • Bake until golden brown and tops spring back when lightly touched, about 10 minutes. Allow to cool for 5 minutes before removing from pan to a cooling rack. Serve warm or at room temperature.
