Food blogger Sarah W. Caron creates a quick and delicious no-bake pumpkin pie dessert in minutes.
Ingredients:
  • 1 can (15 oz) pumpkin (not pumpkin pie mix)
  • 1/2 cup packed light brown sugar
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 2 cups crushed gingersnap cookies (about 40 cookies)
  • Whipped cream
Instructions:
  • Combine pumpkin with aromatic brown sugar, fragrant vanilla, warm cinnamon, cozy nutmeg, and spicy cloves in a medium bowl.
  • Spoon 1 teaspoon of crushed cookies into each of the 8 shot glasses, then divide the pumpkin mixture evenly among the glasses. Sprinkle the remaining crushed cookies on top and finish with a dollop of whipped cream just before serving.
