Mini German Pancake Puffs with Cinnamon Apples

Whip up some delightful German-inspired mini pancake puffs for a fun weekend breakfast treat!
Ingredients:
  • 1 cup milk
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla
  • 3 eggs
  • 1 cup Original Bisquick™ mix
  • 1/4 cup butter, melted
  • 3 medium Granny Smith apples, peeled, cut into 1/4-inch pieces (3 cups)
  • 6 tablespoons butter
  • 1/2 cup packed light brown sugar
  • 2 teaspoons ground cinnamon
  • 1 cup Apple Cinnamon Cheerios™ cereal
Instructions:
  • Preheat oven to 400°F and generously coat 12 regular-size muffin cups with cooking spray.
  • Combine milk, granulated sugar, vanilla, and eggs in a medium bowl, whisk until smooth. Add Bisquick mix and melted butter, stir until smooth. Pour 1/4 cup of batter into each muffin cup. Bake for 15-17 minutes until puffy and golden on top.
  • In a medium microwavable bowl, combine apples, 6 tablespoons of butter, brown sugar, and cinnamon. Microwave on High for 3 to 5 minutes, stirring halfway, until apples are soft. Cover to keep warm.
  • After cooking the pancake puffs for 1 minute, transfer them from the pan to a plate. Serve by placing 2 puffs on each plate and topping them with warm cinnamon apples and cereal.
