Decadent chocolate bites filled with jam, sandwiched between mini cakes and coated in rich chocolate.
Ingredients:
  • 6 eggs, separated
  • 1 cup unsalted butter, at room temperature
  • 2 tablespoons unsalted butter, at room temperature
  • 1 cup white sugar
  • 1 (7 ounce) bar milk chocolate, chopped, divided
  • 1.75 cups finely ground blanched almonds
  • 0.75 cup all-purpose flour
  • 0.25 cup blackberry jam
  • Coating:
  • 1 (7 ounce) bar milk chocolate, chopped
  • 2 (4 ounce) bars dark chocolate, chopped
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and line a rimmed baking sheet with parchment paper for easy cleanup.
  • Whisk egg whites in a glass, metal, or ceramic bowl using an electric mixer until stiff peaks form.
  • In a large bowl, use an electric mixer to blend together egg yolks, 1 cup plus 2 tablespoons of butter, and sugar until smooth and creamy.
  • Melt 4 ounces of milk chocolate in a double boiler over simmering water, stirring often. Be sure to scrape down the sides with a rubber spatula to prevent burning. Once melted, take it off the heat, add the remaining 3 ounces of milk chocolate, and stir until smooth. Let it cool for 5 minutes before using.
  • Combine the melted chocolate with the egg yolk mixture until fully incorporated. Mix in the almonds and flour until combined. Gently fold in the beaten egg whites. Spread the batter evenly onto the baking sheet.
  • Bake the chocolate cake in the preheated oven until set and a toothpick comes out clean, for 8 to 10 minutes, adjusting for cake thickness. Let cool completely for about 1 hour.
  • Prepare a baking sheet by lining it with parchment paper.
  • Cut the cake into small 3/4-inch squares. Spread jam on half of the chocolate squares and sandwich them with another chocolate square to make cubes.
  • In a bowl, mix 7 ounces of milk chocolate and dark chocolate. Place 2/3 of the chocolate mixture into the top of a double boiler over simmering water. Stir often, scraping the sides with a rubber spatula to prevent burning, until chocolate is melted (about 5 minutes). Remove from heat, add the remaining chocolate, and stir until smooth.
  • Pierce chocolate cubes with a fork, dip them in chocolate until completely covered, remove excess chocolate with a spoon, and place on a baking sheet to set at room temperature.
