Crispy, caramelized potato pancake poppers - perfect for appetizers or breakfast with bacon and eggs.
Ingredients:
  • 3 tablespoons butter, melted
  • 2 large russet potatoes, peeled
  • 0.5 tablespoon garlic powder
  • 1.5 teaspoons kosher salt
  • 0.25 teaspoon ground black pepper
  • 1 pinch cayenne pepper, or to taste
  • 1 tablespoon olive oil
  • 0.5 cup finely grated Parmigiano-Reggiano cheese
Instructions:
  • First, collect all of your ingredients. Next, preheat your oven to 450 degrees F (230 degrees C). Thoroughly coat the bottom and sides of 24 mini muffin cups with a generous amount of melted butter. Then, place the tin(s) on a baking sheet and keep it to the side until ready to use.
  • Fill a large bowl one-third full with cold water. Grate potatoes into the water, then top off the bowl with more cold water.
  • Gently wash the potatoes with your hands to remove the starch, then drain most of the water and add fresh cold water.
  • Continue rinsing the potatoes until the water runs almost clear. Transfer the potatoes to a colander and allow them to drain for a few minutes.
  • Wrap grated potatoes in a clean kitchen towel and squeeze out any remaining liquid over a bowl.
  • Place the potatoes in a fresh bowl and mix in garlic powder, salt, pepper, cayenne, and olive oil. Sprinkle flour over them, followed by Parmigiano-Reggiano. Gently mix and toss with your hands until well combined and the mixture feels moist.
  • Ensure the potato mixture is well-mixed from the bottom of the bowl to maximize moisture absorption, then scoop into the muffin cups. Don't worry if it slightly overflows the pan by 1/2 to 1 inch.
  • Bake in the center of the oven until golden brown on top, caramelized on the bottom, and crispy all over, 40-45 minutes.
  • Take out of the oven and allow to rest in the pan for 5 minutes before turning them over onto the baking sheet.
